Something I don't do much of. Partly because I eat too much food at bars.
I'm trying something different tonight. Often I'll stir fry some chicken and various veggies in a wok. Once their about done I'll pour in a can of tomato sauce. Let it finish cooking and put that over noodles. It's a quick easy pasta.
Tonight instead of using tomato sauce I'm using a can of peeled, diced tomatoes. And instead of my usual penne, I picked up some tricolored corkscrews. The diced tomatoes were bigger chunks than I thought so the pasta sauce isn't to saucy, er, sauce-like.
On The Stove
Tonight's veggies are asparagus and red pepper. My faves! I'll sprinkle some chopped green onion over it once it is dished up.
For spice I've yet to be convinced there is such a thing as too much garlic. Being lazy tonight I'm just using garlic powder instead of fresh garlic cloves. Add some black pepper, oregano, basil, and a little paprika on the chicken when it was in the wok all alone.
I'm writing this as I'm cooking and there's going to be plenty of sauce for two meals so this better be good.

Who Eats Pasta W/Out Cheese
Having the chunks of tomato instead of just a tomato sauce changed the texture a whole lot. Something I'm usually pretty sensitive to but I quite liked it.
Two things. First, more diced tomatoes in relation to the chicken and veggies would have been a good thing. The tomatoes did the best job or retaining heat and before I finished the plate some of it was getting cold. Second, the asparagus and red pepper got over cooked. My fault but I might have to figure out a a different sequence of events to do this up perfect.
Highly recommended all the same!

I just blogged about what a horrible cook I am. Your meal sounded yummy, but I wouldn't even dare attempt to cook it... :)
