Let's Do it Again
Chili #2
1.3 lbs of stew beef Let's not use beek meat this time.
1 large yellow onion
1 can black beans
1 large can of small diced tomatoes
6 cloves garlic, crushed
cumin
chili powder
Cayenne (I can't believe I forgot the cayenne last time)
salt
pepper
onion powder
In a skillet I browned the meat in two batches. Heated some olive oil and one crushed garlic clover. Brown the meat with salt, pepper, and onion powder. Once browned pour whole mess of stuff into a pot. Repeat a second time for the rest of the meat.
To the pot of meat I added the can of black beans, the can of tomatoes, the last four garlic cloves and spices. I added half the large onion diced and put on to simmer.
While the pot is starting to simmer, drink a beer. Because, really, if your going to have chili you have to have beer.

OK, it's been about two hours and two beers. Next I diced up the remaining half of the onion and put it in the mix. This should leave this half of the onion more solid than the first half adding some texture. Let it simmer another 45 minutes and then turn off the heat.
And eat...

OK, how was it? I mean, minus the beek meat?? LOL! You make me laugh. :)
It was good. As one might suspect it was even better last night after it sat for a couple of days.
It was missing a certain... je ne sais quoi without the beek though.
