And Now For Something Completely Different

I've mentioned and pictured that I am getting several sack fulls of veggies every week from the local farmers market. It really has been great. I'm enjoying lots of new tastes and generally eating much healthier. And that has shown in a (very) slightly slimmer waistline.

I've been sitting on a eggplant for about a week now. I wasn't sure what I was going to do with it. Several years ago an ex (The Drummer) made ratatouille that I thought was delicious. I thought about doing that. It seemed easy. However, the guy I split the veggies with said he made Eggplant Parmesan with the eggplant he took the week before. I like chicken Parmesan. I thought, what the hell, let's give it a shot.

So I looked for and found a recipe that looked doable.

I made some mistakes. I don't think I dried the eggplant well enough. I made my tomato sauce from scratch with tomatoes from the market. I could have used more sauce. I also did not do a real professional job on frying the eggplant. It's just not something I have much practice doing.

The result? Fan-fucking-tabulous!!!

Really, it's hard to go wrong with deep fried anything baked with lots and lots of cheese. And, yeah, this meal really destroys the "eating healthier" aspect of getting the veggies every week. So freakin' what? It was Fantabulous with a capital F!

If you've got a little inspiration and little bit of time give it a go. You will not be disappointed.

NOTE: I worked with a single eggplant. I didn't weigh it but tried to cut the recipe in half. I didn't come any where close to using half the provolone cheese called for. I used no more than 10 slices of it from the deli counter.

Wow, another good for you! :)

I'm always so hesitant to try new recipes--since I'm not much of a cook. But look at you, you just took a recipe and went for it! You're inspiring me--I'm going to try a new recipe sometime soon. I guess it's the only way you learn how to cook! :)

You know, this one was a little bit more complicated. A few stages and some prep work. There are plenty of easy things out there that taste fantastic.

Get some fresh veggies add some chicken or maybe some tofu or even some lean beef and make a stir fry. There are plenty of easy recipes for that or just make it up.

Seriously. Go for it! I used to be a bit of boring cook but then I just decided to start being more adventurous. I'm certainly no cordon bleu. I've made some bad dishes but if you control the proportion you make its just one bad meal and you can try again tomorrow.
